Very Berry Banana Muffins

WHAT YOU’LL NEED:

1 flax egg (1 tbsp ground flax seeds + 3 tbsp water)
1 tsp vanilla
1/3 cup honey
1/3 cup almond milk
1 ripe medium sized banana

1.5 cup oat flour
1/2 cup almond flour
1 tbsp baking powder
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt

1 cup frozen (or fresh) berries
Optional coconut sugar to sprinkle on top 


HOW TO PREPARE:

  1. Set your oven to 375 F

  2. Mix your ground flax seeds and water for the flax egg and set aside for 5 minutes to thicken

  3. Mash your ripe banana in a mixing bowl

  4. Add your vanilla, honey, almond milk and flax egg once thickened

  5. Add your dry ingredients (oat flour, almond flour, baking powder, baking soda, cinnamon, and salt)

  6. Gently fold in your frozen berries - I used an organic mixed blend

  7. Scoop batter into greased muffin baking tray or silicone mold - yields 9 muffins

  8. Option to sprinkle a light amount of coconut sugar on top

  9. Cook for 22-25 minutes or until a toothpick comes out clean from the center

  10. Let cool for 10 minutes before removing from the muffin baking tray

  11. Enjoy :)
