Sweet Potato Crust Pizza

WHAT YOU’LL NEED:
CRUST:
2 large sweet potatoes (2 cups of smashed, baked sweet potato)
3.5 cups oat flour (I made my own with rolled oats in the blender)
1/4 tsp baking powder
1/2 tsp oregano
1/2 tsp salt
1 tbsp olive oil
CHEESE SAUCE:
1 cup soaked cashews overnight
1/2 cup nut milk of your choosing
1/4 cup nutritional yeast
1/2 tsp salt
1/2 tsp garlic powder
2 tbsp tapioca flour
TOPPINGS:
Anything you want to top your pizza with
PIZZA SAUCE
HOW TO PREPARE:

Prepare your sweet potatos the night before, or the morning of. Set oven to 415 F, wash your sweet potatoes, “fork” them, and bake them on a tray for 50-60 minutes. Refrigerate once cooled.

Next Day: Set oven to 375 F.

Take the peels off your sweet potatoes, mash, and add to a bowl (about 2 cups worth).

Make your oat flour and add it to your sweet potatoes with the baking powder, oregano, salt and olive oil.

Mix well, then form into two balls.

Roll out into circles, then bake for 15 minutes.

Next make your cheese sauce. Drain and rinse your cashews, then combine all ingredients into a blender and blend until smooth. Then heat in a pot on the stove until it thickens (about 5 minutes).

Chop and prep your pizza toppings.

Remove the crust from the oven. Add your pizza sauce and any spices you’d like, add dollops of your cheese sauce, and add your toppings.

Bake for another 10-15 minutes.
