Simple Rosemary Seasoned Chickpea+Olive Salad

WHAT YOU’LL NEED:

1 can chickpeas
5 green olives
1/4 of a cucumber
2 tbsp pumpkin seeds
2 cups leafy greens of choice

For The Dressing:

3 tbsp EVOO
1/2 the juice of a lemon
1 tbsp hemp seeds
1 tbsp dried rosemary
salt and pepper to taste

 

HOW TO PREPARE:

  1. Drain and wash your chickpeas, then add to a heated skillet with a little bit of ghee (or oil of your choice). Sprinkle with some salt, and cook until crispy and golden

  2. While that cooks, chop your greens and add it to a plate/bowl

  3. Wash and chop your cucumber, and add to your salad

  4. Wash and chop your olives, and add to your salad with your pumpkin seeds

  5. Mix your dressing ingredients together and pour it over your salad

 

Done! Super simple, super quick, very light, and absolutely delicious.
