Low Sugar Nut Butter Chocolate Chip Cookies

WHAT YOU’LL NEED:

1 tbsp ground flax seeds
3 tbsp water
1/4 cup local honey
1/2 cup nut butter (homemade is the best)

3/4 cup oat flour (I blend mine in a coffee grinder)
1/4 tsp baking powder
1/8 tsp baking soda
1 tsp vanilla
1/4 tsp sea salt or pink Himalayan salt

1/4 (or more) dairy free dark chocolate chips

HOW TO PREPARE:

  1. Set oven to 350F

  2. Combine ground flax seeds with water and let sit for 5 minutes to thicken

  3. Combine flax “egg”, honey and nut butter together

  4. Next, make your oat flour, and combine the rest of the ingredients except the chocolate chips

  5. Add chocolate chips by gently folding it in

  6. Yields 6 large cookies, or 10ish small ones. The big ones turn out softer and more moist

  7. Flatten with fingers, and bake for 9 minutes

  8. Sprinkle some sea salt flakes on top when done, let cool for 5 minutes, and gentle transfer to a cooling rack

  9. Enjoy for up to 5 days, the sooner the better!
