Blueberry Vanilla Muffins

WHAT YOU’LL NEED:

3 ripe bananas
1/4 cup maple syrup
1/4 cup unsweetened almond milk
1 tsp vanilla

1 cup buckwheat flour
1 cup almond flour
1/4 cup vanilla protein powder
1/4 tsp salt
1/2 tsp cinnamon
1/2 tsp baking powder
1 tsp baking soda

1 cup frozen blueberries
1/2 cup walnuts
sunflower seeds to top (optional)

HOW TO PREPARE:

  1. Set oven to 375 F

  2. Mash ripe bananas in a bowl, and mix in maple syrup, milk and vanilla

  3. To the same bowl, add both flours, protein powder, salt, cinnamon, baking powder and baking soda; mix well

  4. Chop walnuts, then add to the bowl. Add frozen blueberries and gently fold in

  5. Line a muffin tray with 12 baking cups, then scoop mixture into cups

  6. Top with sunflower seeds (optional)

  7. Cook for 18 minutes, let cool, then enjoy! Store in an airtight container in the fridge for longer use. Enjoy them cool, warmed up, or at room temperature
